Another weekend, another batch of baking.
While going through Anni’s blog for my Have You Met series, I came across all her delicious looking cupcakes. So I decided to try her Lemonade Cupcake recipe. Be sure to check out her post as she is the one who originally shared it 😀
Also, I can’t wrap my head around mls and grams, as I go by cups, so I’ve done some conversions.
As always, first make sure you have what you need.
For the cupcakes:
- 2 eggs
- 1/2 cup sugar
- 1 tsp vanilla extract/essence
- 1/4 cup (almost) vegetable oil
- 1 cup flour
- 1 tsp baking powder
- 1/4 cup (almost) Fanta (or other orangey sodas out there)
For the topping:
- 1 cup (almost) cream
- 1 tsp vanilla extract
- 2/3 cup (not quite 3/4 but more than 1/2) sour cream
- 1 package vanilla pudding powder
Add sugar, vanilla, and eggs together in a bowl. Then mix it all together.
Add the vegetable oil, and then mix again.
Add flour and baking powder together in a separate bowl.
Now add the dry ingredients and Fanta in with the original mixture. Take turns with these as you add them all together. This was actually quite fun to do.
So now the cupcake mixture is done. Get your wrappers and prepare the trays.
Now pour in the mixture.
I baked them for 20 minutes at 150 degrees celsius.
Hello cupcakes! I used my muffin wrappers instead of cupcakes, I don’t know if there’s a difference if I’m honest. Anyway, time to make the frosting. Make sure you wait for a while first, to make sure the cupcakes have plenty of time to cool, or your frosting will go weird.
For the frosting, pour in the cream, and mix it till it goes stiffer.
I tried with a spoon before I remembered I have an egg beater which sped up the process.
Now add the vanilla, sour cream, and dessert mix. Then mix it all together.
Now you’re meant to pipe it. I don’t have any piping things, so I bought some earlier at the grocery store. I should probably buy nicer ones in the future.
I wasn’t too happy with how I’d decorated them. So I got a teaspoon, poured hot water on the back to heat it up. Then I used it to smooth out the frosting and added some big sprinkles.
I like this way better 😀
Anyway, these were really fun to bake! They didn’t have too strong of a lemonade taste, they seemed like vanilla cupcakes to me. Maybe I messed up the conversions 😂
They are yummy cupcakes though, and I am just loving learning more about baking!

The cupcakes look amazing, as always, Angela! I want to make cupcakes sometime for my team at work so I might try this recipe! (Not for awhile though, too hot to use the oven most days!)

Fair enough though, wait for a cooler day 😄 Or bake in the evenings! I used to do that, but I like to take pictures in natural lighting so i have to bake during the day 😂

These cupcakes look fab! I think the decorations turned out really well in the end. The images are also really good – it’s all straightforward to follow.

Haha, I wasn’t sure either to be honest. But in the supermarket I went to the desserts section, and came across a pack for vanilla pudding so I used that 😃

Oh my goodness Angela!! THESE LOOK SO GOOD 😍😍💖 I’m already starving hahaha so this post was no help for me. But I really want to try these out now!! Fanta in cupcakes…its a fantastic (pun intended 😂) idea!!

They look good. Conversions sound frustrating. I don’t know if I would know how to convert if I ever saw Ml and Grams and somehow turned them into cups

Thanks Meg! I had no idea about conversions, so i just relied on Google. Not sure if they were exactly right though 😃 but it’s all part of the fun!

makes sense why all of that converting is fun. Still, so used to cups that converting would take some getting used to if that ever happened

Usually what separates cupcakes from muffins is lots and lots of buttercream on top! So theyre the same when theyre baking. A muffin is generally said to be healthier since its technically “naked” in comparison. These look really good though!

Most people seem to do that 😀 i prefer muffins because i cant handle anything overly sweet!

When I saw that you posted this one your blog the other day I was like WHAT!!!! I love anything “lemon-esq” flavored so lemonade cupcakes made my eyes widen and mouth water!!! I need to make these now!!! Also those sprinkles!! AH must have them!!! I’m sprinkles obsessed!
