Let’s Bake! (Chocolate Crinkle Cookies Edition)

Well hello there! Let’s get into baking šŸ˜€ You can find the original recipeĀ here. As always, I have halved it.

First, make sure you have all the ingredients you will need.

  • 1/2 cup cocoa powder
  • 1 cup white sugar
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla essence
  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup icing sugar (confectioners sugar)

Mix together cocoa, white sugar and vegetable oil.

Beat in eggs one at a time, then stir in the vanilla.

Add flour, baking powder, and salt. Stir everything.

Now you need to cover the dough and chill it in the freezer for around 30-45 minutes. The original recipe said to put in the fridge for 4 hours, but I don’t have time for that. Some commenters talked about using the freezer instead, so I followed their advice.

Now take it back out.

At this point, I should have left it to return to room temperature, but I dived right in, which may be why my cookies didn’t come out as all the photos I saw online, like this following one.

Anyway, put the icing sugar into a bowl. Spoon out some dough and throw it in. Once it mixes with the icing sugar, it’s so much less sticky and easier to roll.

Then place them on the baking trays. I will say that I did notice that the icing sugar seemed to be ‘melting’ into the cookies, as I couldn’t see it after a while. But I didn’t think much of it. I now realize that the moisture from the mixture drank it all up, which may be why my cookies didn’t look quite the same as the online photos.

Lesson learned, next time wait till it goes down to room temperature before rolling in icing sugar

Anyway, they still tasted good! They taste like fudge brownies šŸ˜€

If you guys do this recipe, let me know if my theory is right as to why my cookies didn’t come out quite right. I get impatient when baking as I just want sweets to eat!

Weekend Review #14

Saturday

I woke up late by my standards again. 8.30am. But I did go to sleep later than usual, past 11pm, cause Ā I got caught up reading The Handmaid’s tale. After finally getting up, I made breakfast. The usual scrambled eggs on toast and coffee.

Also since I got up late, Rory was already up and watching Aladdin, I haven’t seen that in ages, so I watched the second half with him. Then we watched the latest episode of Rick and Morty and Netflix. Finally, it was 11am and we forgot that we should probably do laundry. While it washed, I continued getting ready for the day.

By the way, it’s sunny today!! It’s a miracle, it’s actually sort of warm outside which is better than freezing. So, we decided to go out walking somewhere in the afternoon since it was pretty much lunchtime and we needed to do groceries.

At home, I wanted a quick lunch as it was almost 2, so I settled on some good old fashioned packet noodles.

At 2.30 we headed off to go for a walk. We decided to walk to the Botanical Gardens even though it’s Autumn. It’s on the other side of town from where we live. It takes 30 minutes to walk there, but we were in the mood to just wander around.

It was a nice quiet visit to the Botanical Gardens. It is less colourful than I remember, but it was still a beautiful spot to visit. I’d love to go back in Spring again though!

We decided to stop by for ice-cream on the way back, so we went to Kaffee Eis. I grabbed Ferrero Rocher andĀ Stracciatella (chocolate chip gelato), it was amazing.

We got home at around 5 and just did our own thing. To be honest, my feet were super tired so I just lay down and read some blogs.

For dinner, we had hot dogs.

After dinner, I finished reading The Handmaid’s tale, and decided to give the show a watch since I hadn’t seen it yet. Also now that I’ve finished the book, I won’t get spoilers.

Sunday

We literally didn’t do anything today.

We woke up late, around 9. For breakfast we had fruit toast and blueberry smoothies.

I blogged and watched more of the Handmaid’s Tale. Rory played games and watched on and off. I also did more colouring, and started a jigsaw puzzle.

That was pretty much it. It was really nice to just chill at home.
