Let’s Bake! (Lolly Cake Edition)

I was in the mood for some sweets, specifically a lolly cake. I didn’t realize it was mostly just a big sweet in New Zealand. Have you guys heard of it before?

Anyway, I wanted it, and turns out it’s pretty easy to make. There’s not even any baking involved. It is also in no way good for you, but we won’t let that stop us.

Here’s what you’ll need:

  • 1 packet Eskimo lollies (190g)
  • 1 packet Malt biscuits (250g)
  • 120g butter
  • 1/2 can sweetened condensed milk
  • 1 cup dessicated coconut

Another question, do you guys have these lollies called Eskimos? They taste super soft when you bite into them, almost like a hard marshmallow.

Anyway, you break them all into little pieces.

Next, get your packet of malt biscuits.

Now smash them all into smithereens. I used a blender as it was faster.

Add the butter and condensed milk into a sauce pan and melt them over a low heat.

Now you need to combine all these ingredients into a big bowl. It gets pretty sticky at this point, but you need to roll your dough into a big roll. I made mine more of a loaf.

Put it in the fridge for a couple of hours. Before it gets too hard, slice it up, and that’s it! You have lolly cake.

It tastes just like the slices from the bakery. It’s sooo good, and also soo bad cause it’s super unhealthy. But once it’s a while, treat your self!

  1. I blend the malt biscuits too! I’ve tried the rolling pin and a bag method and it takes forever and the bag ends up getting holes in it. I don’t like coconut so we don’t put that on ours lol 😛

    1. I tried for like 20 minutes with the whole bag trick and it just wasn’t working. The blender is so much easier! I’m okay with coconut, but I didn’t add to much to ours in the end ?

  2. I have never heard of anything like this before! I’ve actually never even seen lollies before. The only thing I know of are just lollipops, haha. This looks like it would taste good though! It’s always fun learning what is normal for people in different areas.

    1. It’s definitely a kiwi treat! Lollies are everywhere here. Lots of different kinds. As well as lots of chocolate ? This recipe is super easy to do, and it’s such a sweet little treat!

    1. It is so tasty, and definitely bad for you 😀 It’s worth it though 🙂 Eskimo lollies are sort of like hard marshmallow candy. I have no idea what sort of candy you have access too, but as long as it has similar texture, it should work 🙂
