Leisurely Drives

Hello! I got lots of great feedback from you guys about my postย Leisurely Walks. I really loved going through all the photos I had taken while I was out on a walk. So this may start a series of sorts, where I write less, and let my photos do the talking.

Yesterday, we had some lovely weather here in Wellington for a change. It was nicer than it had been in weeks. Instead of walking around though, we had plans to go out and spend some time with Rory’s family which is not walking distance. It’s a 15 minutes drive out of town, and while we were driving, I took out my phone and started taking photos for no real reason, other than I wanted to.

Let’s Bake! (ANZAC Cookies Edition)

I’m going to start on a serious note. Today is a public holiday for us in New Zealand (and over in Australia). We are celebrating ANZAC Day. For those not in these countries, let me quickly explain. ANZAC stands for Australia and New Zealand Army Corps. It’s aย national day of rememberance for all those who have served and died in all wars, conflicts and any peacekeeping operations. A day to think on the contribution and suffering of all those who have served. The date was chosen as it was the anniversary of the first landing of the Anzacs in Galipolli. It did not go well, and is seen as a disaster from our countries’ view. While I want to share with you all, a fun little baking post, I don’t want to undercut the importance of this day in my country.

I looked up the history of these cookies on Wiki. Apparently, they were not eaten by soldiers on the frontline, as I was previously told. They were eaten and sold at galas, and other public events to raise money to support the war effort. They were originally called “Soldier’s biscuits” or “ANZAC biscuits”. Traditionally, they are very hard, which helps with their long shelf life. However, the recipe I used makes soft biscuits. If you read the previous baking posts, you’ll know that I prefer soft and chewy biscuits.

As always, first, I checked to make sure that I had all the ingredients.

To make 18 cookies, you will need:

  • 1 cup plain flour
  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 3/4 cup brown sugar
  • 125g butter
  • 2 tbsp golden syrup
  • 1 tsp baking soda
  • 2 tbsp water

Namaste Collective

Namaste Collective

Hey guys! So I bought temporary henna tattoos from Namaste Collective a long time ago (last September actually), and I just came across them. I totally forgot about them! I love their products though, so I consider myself an Avidย fan of their work. I really suggest you check them out!

I found them through Amanda Faye, a YouTuber I follow, who has the cutest daughter (Luna), and lovely husband (Matthias, another YouTuber). Her Instagram isย hereย and she also has an Etsy shop I believe, but whenever I try go there everything is already sold out! They also have a joint channel called Matt & Amandaย (formerly Nerds in Love), which I have been following for years. They are one of my favourite YouTube couples (just behind Felix & Marzia, and Jenna & Julien).


Anyway, she talked about Namaste Collective who are an Australian company who make and sell henna tattoos, as well as a few other products. This was my first little foray into the tattoo world, and they also led me to look into mandala designs. I needed to spend $55 to get the free shipping as well, so I bought three packs of the temporary henna kits. Two in brown, and one in white. They also sent me a free henna kit on top of that !

Let’s Bake! (Chocolate Chip Cookies Edition)

Let’s Bake! (Chocolate Chip Cookies Edition)

I really enjoyed making my last baking post, so I thought I would give it another go!ย Once all the snickerdoodles were gone, I wanted more cookies, and chocolate chip is my second favourite!

The recipe I used is another old, trusted one that I found online. There’s so much recipes out there! I’ll leave a linkย hereย and let you know again, that the recipe I used has been halved. I also am not a fan of nuts, so I always opt to leave those out. This recipe gives you soft, chewy cookies, which again is the type I prefer!

Let’s get into it.

First, make sure you have all the ingredients, cause I’ve been caught out before.

To make 12 cookies, you will need:

  • 1/2 cup butter (softened)
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract/essence (I can’t tell the difference truthfully)
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 2 tsp hot water
  • 1/4 tsp salt
  • 1 cup chocolate chips
