Hey! Welcome to another baking post! I’ve been really happy that I’ve been able to try baking something new every week for a month now! I mean, they’ve all been variations of cookies, but what can I say? I love cookies.
Anyway, you can find the original recipe here. I have halved it as per usual, as well as made some substitutions, as I didn’t check I had everything before making it. I used lemon juice, instead of extract. The lemon taste was very faint because of that, so I would suggest using extract or zest if you want a more lemony taste. I also never have corn syrup, but my maple syrup was out too, so I just used honey.
Let’s start baking!
- 85g butter
- 1/2 cup white sugar
- 1 egg
- 1 tbsp corn syrup (I used honey)
- 1 tsp lemon extract (I used 1 tbsp lemon juice)
- 1 cup flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/4 cup white sugar
Cream together softened butter and sugar.
Beat in the egg, syrup and lemon.
Stir in the flour, baking powder and baking soda
Cover the dough, and refrigerate for an hour. After that, take it out and let it return to room temperature.
Also, you may notice that it’s suddenly darker in the pictures, cause it gets dark by 5 pm on these winter days.
Put the rest of the sugar into a bowl. Scoop out balls of dough and roll them in the sugar.
Place them on the lined trays.
Bake for 10-12 minutes at 150C or until lightly browned.
The cookies taste quite nice, they do taste like a typical tea biscuit, but I only got a faint lemon taste. As always they’er still very nice, and curb my sweet tooth for the time being, so this goes in the win column 🙂

I do like baking cakes, muffins and other stuff but we have no trays for those
I would love to bake all day and get paid while people eat all the goods, but the other side of that, management, money, makes me go nahh. I’ll just keep it as my hobby 😀

I think they’re basically just lemon biscuits, I just went with the name that was on the recipe 😀
I’ve always loved baking, I haven’t done it in ages, but a while ago I thought it would make for a fun blog post, and since then I’ve gotten back into it again 🙂

I have no idea when I started to enjoy baking. At least far back in middle school I believe, I started making pancakes for my family ever saturday with originally some help and now do every saturday without help. But due to a stubborn girdle, my dad has to flip them now.
I love making sugar cookies for Christmas. I love making brownies or pumpkin chocolate chip bread

XD is meant to be a happy face I think, it normally shows up as a smiley face with their eyes shut. I always type that instead of lol or haha, or even 😀

Funnily enough, these ones are quite soft XD
Tea biscuits are traditionally hard, but I like softer cookies, so I don’t bake them for as long. 😀
