Hello all! I did more baking this weekend. I was originally just wanting chocolate chip cookies, like I have previously made. But then Rory suggested adding peanut butter. Peanut butter and chocolate is an amazing mix! I have halved the recipe as usual. You  can find the original recipe here.

Let’s start baking!

Here’s what you’ll need:

  • 1/4 cup softened butter (55 grams)
  • 1/4 cup peanut butter
  • 1/2 cup packed brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 tbsp maple syrup (I didn’t have light corn syrup)
  • 1 tbsp water
  • 1 tsp vanilla essence
  • 1 1/4 cup flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup chocolate chips

Cream together butter, peanut butter, brown sugar, and white sugar.

Beat in the egg.

Stir in syrup, water and vanilla.

Combine flour, baking soda, salt, and combine with the peanut butter mixture.

Fold in chocolate chips.

Roll spoonfuls of mixture onto the baking trays.

Ready to bake

Bake for 10 minutes at 180C degrees.

Notice how they didn’t over expand like my previous cookies? I took your advice and put the batter in the fridge for around 10 minutes. It helped heaps!!

They taste delicious! The peanut butter taste wasn’t as strong as I thought it would be. So I may add more next time. Maybe half a cup instead of a quarter. Either way, they were a fun and delicious spin on regular chocolate chip cookies!

  1. Looks delicious. I enjoy baking and on Saturdays, I tend to make pancakes for my family, which I do not do as often due to being in school over the Fall and Spring
